Preserving Herbs - Herbes Salées and Herb Salt

Herbs and salt are an ancient combination. For thousands of years, humans have been adding flavor to food by using fragrant plants and salt. In this workshop, we will focus on two ways of doing that. One is called Herbes Salées, a traditional herb condiment in Quebec. It keeps well all winter and is a perfect way to capture flavors of the herb garden for use in soups, dressings, marinades, and broths all winter long. We will also make an herb salt that keeps indefinitely on the shelf and can be used to pre-salt meat before roasting or grilling, in dressings and marinades, or as a finishing salt on salads, sandwiches, and all sorts of dishes. Participants will go home with one jar of each, recipes to make more at home, and growing instructions for herbs in the garden.
